My son might be the biggest chocoholic I know and so when we got started talking about what kind of cupcakes he wanted for his 8th birthday he was ready with detailed ideas! Last year I baked him a chocolate cake with chocolate frosting and this year he wanted to go a few steps further. He decided that his cupcakes needed to be quadruple chocolate. How in the world do you end up with quadruple chocolate cupcakes I asked myself. Then I remember these cupcakes that I made for my daughter’s birthday a few months ago and I had an idea. I talked it over with him and we decided that it would be a chocolate cupcake, with chocolate ice cream, with chocolate magic shell topping and chocolate whipped cream on top. Phew, my teeth hurt just thinking about it!
The first step is to mix up a box of chocolate cake, I went with a triple chocolate mix that has teeny tiny chocolate chips mixed in, and fill up your cupcake liners with 1-2 tablespoons of batter. Bake them until the centers are done and then let them cool all the way! While they are cooling get out your ice cream. I bought some tiny cartons of chocolate ice cream from Safeway and then scooped them out into a bowl. Then I stirred and stirred and stirred some more. Doing this helps the ice cream spread onto the cupcakes more like frosting rather than like a big dollop of ice cream. Spread the ice cream on top of your cupcakes almost all the way up to the top of your liners and then squeeze on some “magic shell” topping. Now quickly stick those bad boys back in the freezer!
About 10 minutes before you are ready to eat them, pull them out of the freezer and add your chocolate whipped cream. I am all about the easy way out so I just went and bought a can of chocolate whipped cream, but I’m sure you could whip up your own if you wanted. That is it! Pass them out to those eager little faces and watch them devour those little chocolate piles of goodness.
