If you are anything like me you are always struggling to find the most perfect side dish. I find myself always falling back on the same few things and that can get pretty old. I am a sucker for almost any “bar food”, however they aren’t usually very healthy or what you think of when you are thinking about easy sides. This recipe though is super easy and really delicious!
The first thing you’ll need to do is bake off some potatoes. I like to use the small red potatoes because they are perfect individual serving sizes and they are small enough that they cook up much faster than a regular russet potato. There are two ways to cook your potatoes and which one you use really depends on how much time you have. You can do the traditional over method if you have a lot of time on your hands or if you are baking something else already. Occasionally I will toss a few potatoes in the oven when I know that I am going to baking something else off and then I have them on hand and ready to go for other meals through the week. I takes about an hour to fully cook a potato so make sure you take that into account. The other method is in the microwave. This works great when you are in a hurry because it only takes about 6 minutes to cook a couple potatoes all the way through. Either way once you have cooked potatoes the sky is the limit as to what you can do with them.
For this recipe I took my cooked potatoes and sliced them into five round pieces. Then you will lay them out flat on a baking sheet and sprinkle each one with a little bit of cheese (whatever suits your fancy) a sprinkle of broccoli and a few diced tomato pieces. The tomatoes help add a little moisture to each bit and make this side a little less dry. The Broccoli is a nice addition because it helps up the health factor and adds a nice flavor. Once each of your potato slices is topped stick them back in the oven under the broiler and wait for the cheese to get melty and a little bit brown, maybe 5 minutes. Don’t go too far though because things can go from perfect to burnt in a just a minute!! Pull them out and serve immediately with your favorite burger for a new spin on potato skins!
