So it’s been awhile since I reminded you last about my love of dips and Mexican food. Honestly I can’t believe I haven’t shared my guacamole recipe with you before, because it is seriously one of my favorites. I like to put it on breakfast sandwiches in the morning, eat it with chips for lunch and then smoother it on top of grilled meats for dinner. Really there isn’t a meal that couldn’t benefit from some guacamole in my opinion! A while back I tried to convince my hubby to let me grow an avocado tree in our living room, but then he reminded me of my black thumb and gently told me no. I didn’t like the sound of no, but I really do have a black thumb and would probably kill it before it even thought about making yummy avocados for me to eat. So I let that dream go. For now.
This recipe is a great base for so many other versions of guacamole (I’ll share some ideas below) and really lends itself to almost any flavor you put it with. It can be smooth and creamy, hot and spicy, sweet or anything in between! Plus it only takes about 10 minutes to get it all put together! Score!
Basic Guacamole Recipe
- 3 ripe avocados
- 1/4 cup sour cream
- 1/4 cup finely chopped cilantro
- 1/4 cup finely diced onion
- 1/4 cup finely diced peppers (it’s an Anaheim in my picture)
- 1 Tbsp (or more if you’re like me) minced garlic
- Salt/Pepper to taste
Start by cutting your avocados in half and scooping the flesh (that sounds weird…the fruit maybe) into a bowl. If you are making this dish ahead of time save the pits. If you add the pits into the finished dip it will help keep it from turning brown! Once all your avocado it in the bowl start mashing it up with a fork. I like mine a little chunky so I don’t mash it as long, but you can mash it until it is smooth and creamy if you like! Once your avocado’s are the consistency that you like add in all your other ingredients and give it a few good stirs making sure everything is all mixed up! Now add salt/pepper to taste and you are done! See, easy. I wouldn’t lie to you!
If you are feeling adventurous you can try adding in some other flavors to take it to a whole different level! Some of my favorites are:
- finely diced mango, pineapple or peaches
- red pepper flakes
- paprika/cumin/chili powder
- sriracha
- diced tomatoes
- more garlic! (we are serious garlic lovers over here!)
