Chicken cordon bleu is one of my husbands favorite dishes and one that I don’t make very often. It isn’t super quick or easy to whip up in a hurry so it usually gets skipped over in favor of things that take me 15 minutes or less to whip up after school! I was trying to think of some new recipes to add to our dinner rotation now that school has started and fall is rapidly approaching. I decided to give a go at making a chicken cordon bleu casserole!
Chicken Cordon Bleu Cassrole
- 1 can of cream of chicken soup
- 1 pound of ground chicken (you could also use diced up chicken breasts)
- 1 package of diced ham
- 1 head of broccoli chopped into bite size pieces
- 1 T mustard (i used yellow, but you can use whatever you have on hand)
- 6 slices of swiss chesse
- 1 box of stuffing mix prepared with country crock butter (I recommend a low sodium stuffing or homemade)
This recipe is super easy! While the ground chicken was cooking mix together the soup and the mustard in a large bowl. Add in the diced ham and chopped broccoli. Once the chicken is cooked add it to the bowl and mixed it all together. Then you spray a casserole dish with non stick spray and dump everything in. Top it with 6 slices of swiss cheese and then the stuffing. Put your casserole in a 375 degree oven for about 30 minutes. You know it is done when the stuffing is browned and the cheese is bubbly!
This recipe took me about 10 minutes to throw together after school and only 30 minutes to bake! That means that while I am helping my son with his homework dinner is cooking itself! You can’t beat that!
