I love eating fun and exotic foods, but where we live there isn’t a lot of variety in the types of cuisine available to us. I’ve been watching a lot of shows on both food network and cooking channel and I kept seeing all these great Asian fusion dishes and I couldn’t help but want to try to recreate one myself. So I did! There were quite a few ingredients I couldn’t find locally so I ended up just sort of making it up as I went, but the end result…delicious!
Bahn Mi Sandwiches
- 4 sandwich rolls (the crustier the better)
- 2 thick or 4 thin boneless pork chops
- 1/4 cup Teriyaki sauce
- 1/2 cup BBQ sauce
- 1/4 cup thinly sliced carrots
- 1/4 cup thinly sliced onion
- 1/4 cup finely chopped broccoli
- 1/4 cup finely chopped cauliflower
- 1/2 cup rice wine vinegar
- 1/2 cup water
- 1/4 cup sugar
- 16 thin slices of cucumber
- Mayo or Sour Cream and Sriracha (mixed to taste)
- chopped Cilantro
Bring the vinegar, water and sugar to a boil and them remove from heat and let it cool. Once it is cool pour it over your veggies (except cucumbers) and let marinate at room temperature for 30-60 minutes. While your veggies are pickling slice your porkcops in half lengthwise (if your are using thick chops) and then dice them into 1/2 inch cubes. Put them in a baggie with the teriyaki and BBQ sauces and let the meat marinate. Then slice your rolls and scoop out the middles leaving 1/4 inch shell all the way around.
The pork only takes a few minutes to cook so wait until you almost ready to eat before you throw it in a hot pan. Once it is cooked through start building your sandwich. You start by spreading your mayo mixture onto both the top and bottom of your roll. Layer four of the cucumber slices and then add the cooked pork. Top that with a handful of your pickled veggies and a sprinkle of cilantro. Cover with the top half of your roll and enjoy!
